An easy green salad with cashew nuts that cheers up any dinner or lunch. In this recipe, gem lettuce and arugula harmonize with flat peach to deliver a refreshing flavour. A few cashew nuts add a delight crunchiness. The dressing is enough for a few salads.
In East France, spring in 2021 was quite capricious and summer was exceptionally rainy. So, it was a surprise that peaches available taste so delicious. The beauty is below.


If you don’t have flat peach available, replace it with regular peach.


Easy green salad with cashew ingredients
- 2 cups gem lettuce, washed and dried
- 1 cup arugula, washed and dried
- A few raw cashew nuts
- 1 flat peach sliced in half moons
- vinaigrette
Salad dressing for easy green salad with cashew nuts
- 1 teaspoon of mustard
- 50 ml of wine vinegar
- 100 ml of olive oil
- Salt and black pepper
- In a jar, pour vinegar, mustard, salt and pepper and mix well by hand with a spoon until everything is mixed. Add olive oil and mix again with a spoon.
How to assemble a salad
Add a layer of lettuce, then arugula. Spread peach in pieces on top and then cashew nuts. Drizzle with dressing just before serving. If you drizzle a long time before the salad gets mushy.
